Pecan Bars

Ingredients

  • 1 cup Brown Sugar
  • 1/4 cup Coconut Oil
  • 1 egg
  • 1 tsp. Vanilla Extract
  • 3/4 Cup All-Purpose Flour
  • 1 tsp. baking powder
  • 1/2 tsp. Salt
  • 1/2 cup Chopped Pecans

Cooking Directions

1 Heat oven to 350º

2 Grease 8×8 baking dish.

3 In medium bowl mix in sugar, coconut oil, egg, and coconut oil.

4 Combine, flour, baking powder, and salt. Add to sugar mixture. Stir in pecans.

Spread batter in baking dish.

6 Bake 25 minutes.

Cut into 16 squares.

Classic Oatmeal Raisin Cookies

Ingredients

  • 1/2 Cup Butter
  • 3 Tbsp. Coconut oil
  • 3/4 Cup Brown sugar
  • 1/2 Cup sugar
  • 2 eggs
  • 2 tsp. Vanilla
  • 2 Tbsp. Milk
  • 1 1/2 cups All Purpose Flour
  • 1 tsp. Baking soda
  • 1 tsp. Cinnamon
  • 1/2 tsp. salt
  • 3 cups oatmeal
  • 1 cup raisins

Cooking Directions

1 Preheat oven to 350°.

2  beat butter and coconut oil with sugar and brown sugar until creamy. Add eggs and vanilla. Mix ingredients well.

4 Separately combine flour, baking soda, cinnamon, and salt. Add combined dry ingredients to the mixture and mix well.

5 Stir in  oatmeal and raisins.

6 Spoon drops of dough onto cookie sheet.

7 Bake for 9 minutes or until golden brown.

Fantasy Fudge

Ingredients

  • 1 cup sugar
  • 3/4 cup butter
  • 5 oz. evaporated milk
  • 12 oz. Semi-sweet baker’s chocolate, chopped
  • 7 oz. Marshmallow creme
  • 1 Cup walnuts, chopped
  • 1 tsp. Vanilla extract

Cooking Directions

1 Line 9 inch pan with foil.

2 boil milk, butter and sugar in a large saucepan over medium heat. Stir constantly until thermometer reaches 234°.

3 Remove from heat. Stir in chocolate and marshmallow creme until melted.

4 Mix in nuts and vanilla.

5 pour into pan. Spread evenly.

6 Cool completely.

7 Cut into 36 squares.

Easy-As-Pie Apple Pie

 This recipe is for novice pie makers or for anyone in a hurry to make a fresher tasting pie than a store bought one.

Ingredients

  • 1 Pie Crust
  • Egg white from 1 egg
  • 3/4 cup sugar
  • 2 tbsp. Cornstarch
  • 1 tbsp. Ground Cinnamon
  • 4 Cups Apples, thinly sliced

Cooking Directions

1 Preheat oven to 425º

2 Brush crust with egg white.

3 Mix sugar, cornstarch, and cinnamon in small bowl.

4 Put sliced apples in large bowl. Toss mixture from smaller bowl in with the apples until mixture has well coated the apples.

5 Spread prepared apple slices into the pie crust from the center out to the edge.

6 Bake 20 minutes or until golden brown.
